Roasted Pumpkin Seeds

- Seeds from a fresh pumpkin, rinsed and dried
- Vegetable oil
- Spices and seasonings (see note)
- Preheat oven to 425˚F.
- In a large bowl, toss together pumpkin seeds with a drizzle of oil and desired spices/seasonings Spread the pumpkin seeds in a single layer on a baking sheet. Roast in preheated oven for 20 minutes, stirring once, or until golden.
Keep things simple by sprinkling salt and pepper on your pumpkin seeds. Spice things up with cumin, chili powder or smoked paprika if you like things savoury, or with a little pumpkin pie spice (cinnamon, ginger, nutmeg, cloves), if you like things sweet.
