Cajun Spice Rub


This recipe is adapted from one of my sister's culinary school recipes. I brought down the amount of salt... by a lot ? and reduced the amounts so that it doesn't serve a billion people ?. This rub makes a mean blackened chicken, pork or fish, and also works as a popcorn topping - you might just want to scale this recipe back up and leave it in your spice rack!

Ingredients

  • 9 g paprika

  • 3 g onion powder

  • 3 g garlic powder

  • 2.5 g black pepper

  • 1 g cayenne pepper

  • 0.5 g dried oregano

  • 0.5 g dried thyme

  • 6 g kosher salt

  • 8 g sugar

Instructions

  1. Mix together all ingredients in a small bowl. Store in a tight container in a cool, dry place.
